In Germany, there is a nationwide monitoring plan which foresees that official controls are carried out on the basis of a risk analysis. Under this monitoring program, 1135 establishments producing fruit salads were inspected nationwide in 2021. Deficiencies were found in ¼ of the tested samples.
The deficiencies included incorrect refrigeration: pre-cut fruit should be stored at a maximum of 7°C. Inadequate hygiene and deficiencies in mandatory self-testing were also noted. Pre-cut fruit salads are susceptible to microbial contamination and this risk can be minimized by following the hygiene measures.
